Vacanza is the brainchild of pizza-obsessed owner Nick Gilbert, whose love of Italian food culture, and specifically pizza, took him on a journey to southern Italy. Here he spent time learning the traditional art of pizza-making, before ultimately turning his passion into Vacanza Pizzeria.
Since opening its first venue in Bronte in 2010, Vacanza has grown to become a local Sydney favourite, with a Surry Hills venue following in 2012. Using ingredients sourced from Australia and Italy’s finest producers and suppliers, Vacanza not only boasts some of Sydney’s best pizza, but also a wide selection of antipasti, pasta and other exceptional Italian dishes.
